Preheat smoker to 200 degrees. Generously season roast with Jed's Maple Grilling Rub on all sides. Allow roast to rest at room temperature while smoker comes to smoking temperature. Once smoker is at temperature, place the roast on the middle rack and insert the temperature probe into the center. Smoke the beef roast at 200 for 1 hour. After 1 hour, increase smoker temp to 250 degrees. Smoke the roast for 2 hours or until internal temperature is your desired doneness (rare = 135, medium rare = 145, medium =d 155, well done = 170). Remove the roast from smoker and allow to rest for 5-10 minutes. Slice against the grain before serving.
